For over 25 years, the Kalafatis family — Gus (father) and Peter (son) — have remained deeply involved in every detail. From the first prep to the final plate, they’re in and out of the kitchen daily, ensuring each item is crafted with care and consistency.

Gus came to America from Greece as a teenager — no money, no family, no English. Only a dream. He started as a dishwasher while his wife waitressed. Twelve-hour days, six days a week. Through sheer determination he saved enough to buy his first coffee shop in Brooklyn, then kept building until he and Peter opened Heritage Diner in 2000.
More than a restaurateur, Gus is the soul of this place — a man who turned hardship into hospitality and built a true neighborhood institution where everyone is welcomed like family.

Born into the restaurant business, raised in 1980s Brooklyn, Peter brings an artist’s eye to everything he touches. Philosopher. Published author. Master leather craftsman. Digital painter. Guitarist. Everything Peter does has an artistic expression — and the kitchen is no exception.
Today he leads menu creation at Heritage, constantly experimenting in the test kitchen: from fig & feta sourdough French toast to rib eye steak burgers topped with fig jam and peanut butter. Bold. Inventive. Unforgettable.

We bake our own sourdough bread from scratch — never frozen, always fresh. It’s the backbone of our gourmet sandwiches, the toast beneath your eggs, and the foundation of entrées that deserve better than store-bought slices.
We also craft our own rich brioche bread — the star of a French toast lineup that runs from fig & feta pistachio to rib eye steak & egg to pecan mixed berry compote.
We stretch 12″ pizzas to order, handcraft acai & Greek yogurt parfaits, hand-trim steaks from 3lb tomahawks to 20oz porterhouses, and blend protein-packed smoothies that fuel your day.
